About Guar Gum

Guar Gum is a cost effective thickener and stabilizer. It is also widely used as a binder, plasticizer and emulsifier. Guar Gum is derived from guar seeds and these seeds have high low-shear viscosity giving Guar Gum its thickening and stabilising properties.

Guar crop is cultivated in semi-arid regions of North West India like Gujarat, Madhya Pradesh, Haryana and Rajasthan. To get the best yield and harvesting results Gaur seeds are sown in sandy soils.

Properties of Guar Gum:

  • In dry form it is stable for 6-12 months
  • Guar is draught resistant plant
  • In formulations it holds back the growth of ice crystal
  • Guar gum forms gel in water
  • Guar Gum is an excellent modifier of rheology of food products such as dressings, soups and sauces
  • Used for increasing dough yield, give greater resilience, and for improving texture and shelf life of bakery products.
  • In meat products, it acts as a lubricant and binder.
